Dinner from the Seasonal Garden
To the untrained eye, this may seem like just chicken bits with rough-chopped vegies from the garden, olive oil, saltflakes and cracked pepper lazily dumped on top.
But to the Seasonal Kitchen Connoisseur, it is unmistakably chicken bits with rough-chopped vegies from the garden, olive oil, saltflakes and cracked pepper lazily dumped on top....
and...... cracked coriander seeds....from the garden. [teehee]
Recipe (as if you needed one!)
- Local free range chook thighs (the tastiest part of a chook, I think)
- Summer veg, picked about 4 minutes prior! (tomatos, zucchini, basil and capsicum)
- Aussie olive oil (the best in the world, not that I'm biased!)
- local pink Murray salt flakes
- cracked pepper
-cracked coriander seeds (from our garden), in an old grinder that ran out of pepper.
Cut into big bits, dump into baking dish, in oven for 30mins at 180C.

Do you need a picture of it once cooked?.... nah, scrub that, I couldn't be bothered.... ;o)

Oh, and basil torn up and thrown in at the last minute... Also from the garden. Forgot about that. :D
